- 8 oz halloumi sliced
- 2 cups organic watermelon cubed
- 2 cups organic baby arugula
- 1 small cucumber sliced
- ΒΌ cup fresh mint torn
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Raw honey
- Sea salt and black pepper
- 2 tbsp organic pumpkin seeds optional
Grill halloumi in a stainless steel pan, 2-3 min per side. Cool slightly.
Cube watermelon, slice cucumber, tear mint.
Whisk olive oil, vinegar, honey, salt, pepper for dressing.
Toss arugula, watermelon, cucumber, mint, seeds in a bowl. Add halloumi.
Drizzle dressing, toss, and serve.
