Ingredients
  

  • 8 oz halloumi sliced
  • 2 cups organic watermelon cubed
  • 2 cups organic baby arugula
  • 1 small cucumber sliced
  • ΒΌ cup fresh mint torn
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Raw honey
  • Sea salt and black pepper
  • 2 tbsp organic pumpkin seeds optional

Instructions
 

  • Grill halloumi in a stainless steel pan, 2-3 min per side. Cool slightly.
  • Cube watermelon, slice cucumber, tear mint.
  • Whisk olive oil, vinegar, honey, salt, pepper for dressing.
  • Toss arugula, watermelon, cucumber, mint, seeds in a bowl. Add halloumi.
  • Drizzle dressing, toss, and serve.
